Shish Kebab

1 leg of lamb, cut into 2″ cubes, fat removed

Mix the following, add to lamb, cover and refrigerate overnight:

2 large onions, thinly sliced

1-1/2 t oregano

2 t freshly ground coriander

1 T salt (seems excessive..)

1/4 t pepper

1/8 cup olive oil (seems too little)

1/4 cup dry red wine (substitute red or cider vinegar with water or unsweetened grape juice)

Broil 2 lbs. white onions, 6 green peppers and 6 tomatoes before broiling the meat and keep warm in a covered casserole dish. Broil (or BBQ) skewered lamb and mix with above vegetables.
